heat the oven 160/170
then,
out the icebox:
one egg
slab of butter
fullfat milkÂ
out the pantry:
selfraising flour
vanilla pod
bag of cane sugar
out the cupboard:
loaf tin
brown parchment paperÂ
pan for the hob
in the pan:
150g butter
125g cane sugar
the seeds of the vanilla pod
then:
low heat, melt all; add the egg (whisked), 190g selfraising, 50ml full fat milk
then:
grease sides and base of loaf tin with butter, line with parchment paper, pour mixture in, place on the middle rack of the heated oven for 40/50 mins; take out, let the baby rest before slicing and biting into the warmth and moistness and hoursaffirming sensation of your own homebaked banana bread magicked from the riches of this planet rocketing on through the ether, the stars spangled and the universe blown away from what the hell you created these fine eternal moments of your existence
